Simple Aloo Tomato – Aka – Aloo tamatar subzi – baniya Style

This is the Simplest version

it is a simple soul food of Baniyas…

5  Potato – boiled but firm and done , Break it with Hands

2 Tomato – cut in very small pieces

1 pinch of strong hing

2 green chillies

3/4 tsp turmeric

3/4 tsp zeera

1/4 inch ginger – grated

1/2 tsp chill powder – kutta hua preferrably

1 heaped tsp Dhaniya powder – kutta hua preferrably

1 small bunch of Dhaniya Patta – Corriander- Cut in very small pieces

 

4 tsp – Heat a wok with – put Filtered Mustard / Groundnut oil / Ghee – I do not suggest refined…

put zeera – let is splutter – put hing – turmeric – chillies ,grated ginger , immediately put tomatoes and put salt to taste and mash it .

After tomatoes are soft put boiled Aloo turn and mix with masala , then add water for thin or thick gravy as per your choice and simmer, let the sabzi get to a nice consistency with nice big and small lumps of aloo seen.

Put corriander at end.

Enjoy with puri , roti , or even rice , or make it thick and put it in a chappati as a roll and pack of for kids lunch
